1. Heat broiler. Place rack 4-inches from heating element. Leaving stem ends attached, cut zucchini lengthwise into 1/4-inch slices. Place on a baking sheet and carefully fan out slices.
2. Brush with olive oil and sprinkle with salt and pepper. Broil about 6 minutes or until zucchini is softened. Carefully spread fans out more. Sprinkle with cheese. Broil 5 to 6 minutes more, until cheese is lightly browned.
