"Spiced Up" Apple Cider Pound Cake

Ingredients
  • 6 large eggs
  • 3 cups flour
  • 16 tablespoons butter or margarine
  • 0.5 teaspoon salt
  • 0.5 cup Shortening
  • 0.5 teaspoon allspice
  • 3 cups sugar
  • 0.5 teaspoon nutmeg
  • 0.5 tsp baking powder
  • 1 c apple cider
  • 0.25 tsp cloves
  • 0.25 tsp cinnamon
  • 1 tsp vanilla
  • 0 -----CARAMEL GLAZE-----
  • 0.5 c sugar
  • 0.25 c buttermilk
  • 0.25 tsp soda
  • 0.5 Tbsp Corn syrup
  • 0.25 c margarine
  • 0.25 tsp vanilla
Directions

Soften margarine and shortening. Add sugar gradually, beating for 1- minutes. Add egg one at a time, beating 1 1/2 minutes after each egg. Sift together all the dry ingredients and add alternately with the cider and vanilla to the shortening mixture. Blend well and bake in a 10" tube pan at 235~F for 1 1/2 hours. CARAMEL GLAZE: Bring ingredients to a rolling boil over low heat and boil for 10 minutes, stirring occasionaly. Source: Prize Winning Recipes from the State Fair of Texas, 1976.
